Heat vegetable oil in a large skillet over medium heat. Add diced onions and cook until translucent. 2. Add diced chicken or beef to the skillet and cook until browned. 3. Stir in diced carrots and peas, and cook until the vegetables are tender. 4. Add cooked rice to the skillet and stir-fry until well combined. 5. Add ketchup to the rice mixture, stirring to evenly distribute. Season with salt and pepper to taste. 6. In a separate non-stick pan, beat the eggs and pour them over the rice mixture in the skillet. 7. Gently swirl the pan to ensure the egg covers the entire surface of the rice. Cook until the edges of the omelette are set but the center is still slightly runny. 8. Carefully fold the omelette over the rice and slide it onto a plate. 9.
